This is the best biscuit recipe I know. It's from Betty Crocker's Cookbook (1973).

Baking Powder Biscuits
2 cups all-purpose flour
3 tsp baking powder (DO NOT accidentally use baking soda because you're not awake yet. Ask me how I know)
1 tsp salt
1/4 cup butter (or replacement of choice)
1/4 cup milk

Heat oven to 450 degrees F. Measure flour, baking powder, and salt into bowl. Cut in shortening thoroughly, until the mixture looks like meal. Stir in almost all the milk. If the dough is not pliable, add just enough milk to make a soft, puffy, easy-to-roll dough. (Too much milk makes the dough sticky.)

Round up biscuits on a lightly floured cloth-covered board (I don't bother with the cloth). Knead lightly 20 to 25 times, about 30 seconds. Roll 1/2 inch thick, cut with floured biscuit cutter. Place on ungreased baking sheet, bke 10 to 12 minutes or until golden brown.

Cut that way the biscuits will rise and be easy to break in half to be buttered. They are lovely. I'm actually more likely these days to make a double recipe, roll it out in two circles, cover one with a brown sugar/cinnamon mixture and lay the other one on top. Then you can slice the stack in to wedges or rectangles and move them to the baking tray. If the edges of the stacks aren't precisely lined up, they get lovely and crispy and I prefer that.

I should note that this is not the Southern Biscuits recipe, but I haven't ever tried that one.

A couple of variations:

Buttermilk: substitute buttermilk for milk; decrease baking powder to 2 tsp and add 1/4 tsp soda to flour.

Cheese: Stir in 1/2 cup shredded sharp cheddar cheese with the milk.
