Fig Jam & Spiced Fig Jam

This is an adaptation of a Food & Wine recipe. For spiced fig jam, add the optional ingredients below.

Fig Jam
3lbs of fresh figs (I found them for only $3.99/lb at Trader Joe's!!!),
1.25 cups sugar,
.75 cups water
.5 cups bottled lemon juice
1 5" cinnamon stick (optional)
1 tsp black peppercorns (optional)
1 star anise (optional)
1 vanilla bean, split (optional)

Mix figs and sugar together and let macerate several hours in the fridge, or about 20 minutes on the counter, then dump into a pan and add the water and lemon. If using the optional ingredients, add the vanilla bean and cinnamon to the pot, and tie the peppercorns and star anise in muslin, cheesecloth, or a tea bag and add to the pot. Bring to a boil, and cook until very thick and most of the liquid has evaporated (30-45 minutes?).

Can in 6 half-pint jars, and process in a water bath for 10 minutes.
