Also, you should visit one of Toshi Yoroizuka's shops if you like desserts (he's my number 1 favourite pattisier even though I haven't eaten any of his creations *sob*). There's one in Akasaka and one in Shibuya (EBISU, the one in Shibuya is extremely famous btw). Think of me if you eat there! ;A;
About the cooking, I've never made shepherd's pie before, but I guess less is more? Japan has a lot of fat beef btw, and the fat is what makes beef soft, but though the oil from high quality meat does not have that "urgh, oily!!" smell, try not to make it oily anyway I guess since they love their food healthy? OTL I suck at giving advice OTL
EDIT: According to sis, you can add a little bit of milk powder to the potato make it more fragrant, or milk (but milk powder's better), or butter, though it is less healthy.
I also did some thinking about some good American food, and I can only think of pumpkin pie, apple pie, casserole(maybe? depends) and the sort of food you'd eat at Thanksgiving ;w; I'm sorry if I can't be of any help ;A;

i will try adding milk to the potatoes to make them soft *w* since I dunno where to get milk powder + I'm lazy orz
I also think of thanksgiving food when I think of American food, haha... I wonder how they would react if they came home to find me in their kitchen preparing a huge whole turkey on the table with a beer can stuck between its legs (how I have seen my family flavor their turkey). If I could bake I would love to make apple or pumpkin pie though ;w; (no way I can find canned pumpkin here though, I think?)
