I made this experimental recipe for the family gathering yesterday, and it went over so well that I decided to record it for future reference. It ain't healthy in the least, but it was quite tasty and very easy to make:

Corn Pudding

16 oz. package frozen corn kernels
2 (15 oz.) cans creamed corn
2 (8.5 oz.) packages corn bread/muffin mix (I used ShopRite brand, because Jiffy contains lard)
1/2 lb. butter, melted (Yes, 1/2 lb. I told you it isn't healthy!)
4 eggs
1 tsp. ground nutmeg

Cook frozen corn in boiling water for 5 minutes, and drain well. Place in a large mixing bowl. Add creamed corn, corn bread mix, melted butter, eggs, and nutmeg. Mix well until thoroughly combined. Season to taste with salt and pepper.

Pour mixture into a 13 x 9" baking dish. Bake uncovered in a 350 degree oven until top begins to brown around the edges and the center is set - approximately 45 to 50 minutes. A thin knife inserted in the center should not come out wet.

This was really tasty. A little sweet, a little savory, nice and moist. Kind of like a super moist corn bread that must be spooned out. (I wonder if this is similar to 'spoon bread'?) Maybe I'll change it up next time by adding some grated cheddar and some sauteed onions and jalapenos, that would probably be really good.

I just spent two and a half hours digging out my car. When I go out there tomorrow morning, my parking spot had better be just as clean as it was when I left it.

I really miss my kitty. :o( Sadness.
