I made this last week, and it was so good I'm making it again tonight. In fact, it just came out of the oven! Last time I used kale, but tonight I used escarole because that's what I had on hand. That's the beauty of this recipe - you can use whatever you have on hand, and create infinite combinations! Great to use up leftover cooked veggies,

mmm quiche! Ben and I tried to go to Classic Quiche last night with some friends but it turns out they are closed on mondays =( We ended up at Veggie Heaven instead.

I never heard of Classic Quiche, where is that? (Can't go wrong with Veggie Heaven, though...!)

It's Teaneck. Not too far from Veggie Heaven. It's really good and they have this nice outdoor seating.

Wow, that's actually a really nice menu. Lots o' veggie options! If we can actually get ourselves to trek all the way to Teaneck and NOT go to Veggie Heaven, then I'd like to try this place out sometime...
