Totally irrelevant goat butter advisory from my Springerle fanatic group on the facebooks:

Goat butter is a very light butter. Meaning it has a very delicate favour and almost instantly melts in your mouth. It works equal amounts to cow butter in recipes (not sure where the post went).
In addtion to goat milk, we use our milk in everything that you would use cow milk for.
In fact I have cream cheese culturing right now, for some cream cheese cut out cookies tomorrow or the next day.
The secret to goat milk products is finding milk products from healthy well cared for animals. Everything that goes into a dairy animal reflects in the quality of product that comes out.
In fact most folks that tastes our products always say "Wow, that's goat milk!, it tastes nothing like goats milk I've had before".
In addition to butter, we make all goat dairy goat product... ice cream, caramels, soft and hard cheeses, yoghurt... the list is endless.
I'm not sure what state your in, but most places raw milk is not allowed for sales. But if you can seek out someone with dairy goats, most don't mind sharing. ;)
*The cookies held their impression, and tasted light and wonderful.
Also I have seen goat butter available in stores and online.
