Sounds logical. I mean, I've been asked by Atsushi-sama that I'd leave it out, but sometimes it just feels awkward not to say it. But you're right, I should use the honoricis in public which I usually do when he's not around, though journals are a different thing.
It has confused me a bit as well, especially since Oishi-sama requested it - what I've tried is calling them what they wish to be called when speaking to them or in private, and still referring to them as 'sama' everywhere else. It seems to work...
In private, do what they want in public always be respectful if you want high butler rankings. And as a bonus if they don't like it and they're totally lame you can annoy them just by doing your job.
