I'm in love.
My lover? Pinzolo Fiave's asiago pressato.
Asiago pressato is fresh asiago cheese, much moister than the asiago you usually find (Asiago d'Allevo) that tastes more like parmesan. It comes from the mountainous area of Italy nearish to Venice, and made of cow's milk.
So, this has the fresh tang that hoop cheese has. But that's blended in with the incredibly smooth, sweet, milky flavor. It melts in your mouth, literally. Yeah, it's not complex by most cheese standards, but sometimes you want a really edible cheese. Also: still better than Kraft.
I think this is a little bit too tangy to be a fondue cheese, but it went great in my alfredo sauce. It's incredibly melty and I'm imagining the best pizza ever with it.
And it's fairly cheap by nice-cheese standards, only $10/lb. So I got a big chunk of it for $6. So if you're going to splurge on real cheese, I'd suggest this one.
