Lumbard mustard inspired
- 70-100 g mustard seed (about half black and half yellow)
- about 1-1.5 dl honey
- 4 tbs balsamic vinegar
- ginger
- cinnamon (ceylon)
- cloves
- nutmeg
- mace
- pepper
- Grind mustard seed fairly coarsely
- Heat the honey
- Mix the vinegar with the honey
- Add the mustard seed and stir
- Add spices to taste
Tastes quite ok, I probably should play some more with the spicing, and I'm not sure if it needs more vinegar. I'll let it rest for a few weeks and check again.
