Lumbard mustard inspired

  • 70-100 g mustard seed (about half black and half yellow)
  • about 1-1.5 dl honey
  • 4 tbs balsamic vinegar
  • ginger
  • cinnamon (ceylon)
  • cloves
  • nutmeg
  • mace
  • pepper

  1. Grind mustard seed fairly coarsely
  2. Heat the honey
  3. Mix the vinegar with the honey
  4. Add the mustard seed and stir
  5. Add spices to taste

Tastes quite ok, I probably should play some more with the spicing, and I'm not sure if it needs more vinegar. I'll let it rest for a few weeks and check again.
