Apple season. We are in the middle of our (all 6 trees bear fruit during the same 3 week period, all summer apples that will not keep). So far we have 7-8 liters of dried apples (packed jars), which should last a year or so. Will try to season one batch (ceylon cinnamon and a dash of ginger sounds like a good first bet), just to keep around as a special treat. Next is packing away pre-cut pieces for apple pie, and perhaps making a gallon or two of apple sauce (dash of cinnamon and some saffron being my preferred modifier). And apple butter, must make some extra spicy apple butter.

Apple butter

2 kg apples
5 dl water
1 dl apple vinegar

Simmer fruit water, vinegar until soft. Pass through a strainer.

Add spices (approximately) per liter of pulp:

5 dl demerara sugar
2-3 tbs ceylon cinnanon
1-2 tbs cloves
2 tsp allspice

Simmer until it passes the marmelade test, playing havoc with the spicing until it is where you want it. Place in sterile jars and store in the earth cellar.

Perfect on porridge as well!
