Deborah must be loving this. Sixties, sunny, warm. I have all the windows in my place open. I made the greatest herb-butter today. I found cheese rinds at Whole Foods for under $2.00 a carton. You can shave the cheese off, and it ends up being quite a lot--maybe a couple cups. A great replacement for parmesan, btw. More flavorful. I bought a pint of whipping cream, and folded in about 1/2 to 2/3 of a cup of the grated cheese. Also mixed in were dill and dried basil. Mixed it on low for awhile, drained out liquid, and then mixed on high for another five or ten minutes. Also mixed in some other spices at this point--a mix called heatwave from Elements of Spice. It has green chilies, horseradish, ginger, among other things. Finished product was creamy and very, very good.
I've done this with chocolate also--by mistake. I was trying to make mousse and over-whipped it. Ended up with chocolate butter. It was amazing, but very, very rich.
