I promised SA this recipe, so everyone gets it.

Baked Burritos

This is one of those things that I make with leftovers all the time. What goes in them really depends on what you have laying around, but we eat a lot of Spanish/Caribbean food so our panty is heavy on the beans and rice and certain spices.

First, this recipe can be beef, pork, chicken or veggie. If you do beef or pork, you should simmer a fatty cut of meat in (for pork, choose ribs or something else with connective tissue, NOT a pork chop:

1 diced onion (browned)
3 cloves garlic (chopped up)
½ tbsp of cumin seeds (also browned with the onion)
Some coriander
Some adobo (if you have it)
About a thumb-nail's worth of pimenton (this is sort of like powdered chipotle, and comes in sweet and hot versions like paprika, I use both depending on what I'm making. Pimenton is easier for Euros to get, chipotle for N.A.'s so use what you can, but pimenton is freakin' good stuff)
1 and ½ c beef stock/broth
Sea salt to taste

Cook that for about an hour and 1/5 minutes and let the broth reduce so that the meat gets all sticky and good. You can add other spices to taste, chiles, oregano, cilantro (the tops of coriander) cheyenne to taste, whatever.

With chicken, you should use leftover chicken and cook it in the same sort of mixture as above, but for much shorter, like ten minutes, and use chicken broth.

For veggie: sauté or roast onions, peppers, squash, tomatoes and use that as a filling.

Now, the easy part.

Layer black beans (or whatever kind you like), corn, meat/veggie filling, rice (if you have it, but I always do) and a handful of cheese (caso blanco, jack, cheddar, whatever) , some cilantro, and extra spice of you want it and fold up as a burrito. Lay the seam side down in a greased baking tray. Continue on until everything is gone. Cover the burritos with more cheese (I use part jack and part cheddar or ranchero or hoop or whatever combination of sharp/melty cheese I have on hand, the combination is the important part) and baked for about half and hour or until it appears done.

Serve with sour cream and avocado and homemade pico de gallo*

Eyeball some onion, a jalapeno, a radish and some tomato. Chop up fine. Toss with lime juice, sea salt, and cilantro. EAT.
