why am i posting so many recipes? maybe it's a distraction from the piano keys, maybe it's a way to keep me from finishing any of my new music- because finishing the music would mean i'd have to do something with it, and that would mean i might be a success at something, and who wants that? i don't want to over-analyze it or anything, though.
ho hum.
so, it's soup weather, and vegetable soup is the easiest thing in the world. sautee some onion and carrot and celery and garlic. add two cans of stock and a can of tomatoes and a tbsp of dried mixed herbs. cook 30 minutes. add some thawed frozen peas, thawed frozen green beans, a can of drained corn, some quartered small new potatoes. cook another 15 minutes and add some fresh chopped parsley and salt and pepper. the end.
< p.s.: if you want to add some kidney beans, fresh spinach, and pasta, it's minestrone.>
here's what i did: took my leftover veggie soup out of the fridge.
browned a pound of ground turkey in my iron skillet. scooped out the solids from the soup and stirred them in. added some soup liquid until it was a thick stew. added some tomato paste to thicken it up. salt and pepper. (and truth be told, a squirt of ketchup or barbecue sauce or taco sauce is just fine here).
topped with mashed potatoes (2 yellow potatoes chopped up and boiled in salted water until tender, 15 minutes. drained and mashed with a bit of butter and some chicken stock i had in the fridge. salt and pepper).
sprinkled with sharp cheddar and put in a 400 degree oven for 30 minutes until the top was browned and crispy.
let it sit for 15 minutes to firm up and cool down. then i ate way too much.
and now, back to staring at the keyboard.
