as you may or may not know, we received 10 pounds of smoked bacon for christmas. here's another in a long line of baconcentric (tm) recipes:
grilled chicken and corn chowder. with bacon.
chop up 4 slices of bacon, and fry until crispy in soup pot. remove and drain, and pour off all but a tbsp or so of grease. sautee half a chopped yellow onion, and add 2 stalks of chopped celery and 2 chopped carrots and a crushed clove of garlic. stir. add a tbsp of fines herbs, or whatever herb mix you have; something with sage would do, or thyme of course. stir. coarsely shop up 3 red new potatoes, and cook until they have a little color on them.
deglaze pot with a splash of white wine. add two cans of yellow corn, one of them drained. add chicken stock, just to cover veggies. bring to a boil, put a lid on it, turn the heat to simmer. cook 30 minutes.
taste for seasonings, you'll need to add some salt (i use kosher, or sea) and some good grinds of the pepper mill. add a half cup or so of half and half, and cook another few minutes to reduce a bit. mash a potato or two you find in the pot. add a handful of grated sharp cheddar cheese. stir, turn off heat.
ladle into soup bowl, top with a bit more cheese, a sprinkle of that bacon, and some chopped green onion. marvel at the wonder of your cooking, and bask in compliments from the boyfriend you aren't speaking to.
p.s.:
if you are southern, did you eat your lucky blackeyed peas today? took me three stores, but finally located a can of them here in the neighborhood. sauteed some onion and celery and bell pepper, then added the can of peas and some chicken stock. a good sprinkle of cooked bacon (!!!), a dash of red wine vinegar and some salt and pepper. covered them and cooked them 30 minutes. oh man, they were good.
