Do you know about
sandwich loaf?
My mother's go-to cookbooks when I was growing up were late sixties editions of betty crocker and better homes and gardens. Both had strange pictures of party food that, as best as I could tell, was cake with ham and sardines and olives. I think I gathered that one would layer the ham and olive spread on bread instead of say, pound cake, but it wasn't until I was an adult that I actually read the recipe and realized that they were frosted with cream cheese instead of, as I had assumed, buttercream frosting. Thus, my feelings toward sandwich loaf have been a curious mixture of intrigue and revulsion.
Anna Anthropy had a "weird food" themed birthday party on saturday, and I finally made good on my threats to make one. It was DELICIOUS.
Left to right, fillings are
edamame hummus,
shredded beets with yogurt and spices, and tofu salad sandwich filling.
Assembled between sliced up loaf of wheat bread
Frosted and decorated with carrots and olives
I highly recommend this. The sandwich/cake concept is beautiful. Just don't use the fillings suggested in bad seventies cookbooks.
