Had this last night at MIL's house. This is the kind of supper where you ask for the cornbread and someone skewers a piece with a fork and hands it to you. I always felt there was something missing from my dinners at home, and it wasn't good food (my mother is an excellent cook) and it wasn't company (my brother made up for whatever issues my parents had). It was familiarity. It was the fact that people were trying to emulate the recipes of the people still living in the house as well as those dead for decades. MIL is still working on her mother's pound cake recipe.
This is one of the few recipes I can use now. I've modified it. Rice vinegar is mild and only sweet enough as not to be entirely sour; it kept me from having to cut the vinegar with water.
2 cucumbers, peeled in stripes and sliced thinly
sea salt for sprinkling
1 sweet onion, sliced thinly
1 cup rice vinegar
a tiny bit of sugar to taste, or none at all if that's your preference (I use xylitol)
Layer cucumber slices with sprinklings of salt. Let sit for about 30 min, then toss in onion slices, stirring just a bit. Add to a 1-qt jar if desired. Throw rice vinegar over. Put on lid, refrigerate. They'll be gone in a couple of days. You can eat them in salads or just out of the jar. MIL ate several just standing in the kitchen while they were yet lukewarm.
