In the spirit of
chard's recent posting about his dinner, here's some soup:
- 1 head of broccoli, broken into florets. Chop up the stalk also
- About the same volume of chopped savoy cabbage leaves
- 1 large potato, cut into 2cm cubes
- 2 medium-sized red onions, sliced
- 2 fat cloves of garlic
- some olive oil
- the juice from one small lemon
- ground black pepper
- salt if you like
Using a large saucepan, fry the onion in the olive oil until soft. Add crushed garlic and continue frying for another minute. Stir in the potato, broccoli and cabbage. Add enough water to cover the vegetables and season with some black pepper. Bring to the boil and simmer for about 10 minutes, or as long as it takes to cook the potato. Remove from heat, cool a little and then blend with a hand-held blender. Add more seasoning if required and stir in the lemon juice.
I've just had some and enjoyed it so much I wanted to share :-).
The original recipe came from an
Abel and Cole customer. It used 2 heads of broccoli, but I had the cabbage spare. All the ingredients I used came from Abel and Cole or my local Organic shop.
