Fighting wank with chocolate pudding!

vegetariansushi mentioned chocolate and coconut muffins the other day, and made me pudding-hungry.

Tropical Fruit Crumble

For the filling:
3 oz sultanas/raisins/dried apricots
1 orange/2 satsumas, peeled and segmented
3 bananas, sliced
Fruit juice to almost cover the fruit (orange, apple, grape, pineapple…)

For the topping:
3 oz plain wholemeal flour (plain white will do if you don't have wholemeal)
3 oz porridge oats
2 oz sugar (any, but brown is nicest)
4 - 6 tablespoons vegetable oil (any light flavoured oil, not olive oil)
A little desiccated/shredded coconut/chopped nuts/pumpkin seeds (optional)

Put fruit and juice in dish (approx 20 cm/8" round, microwave-proof if you're cooking it in the microwave). Mix all the topping ingredients and sprinkle lightly on top of the fruit. Cook for 8 minutes in microwave on full power (if you’ve got a 650 W microwave - try a bit less time for a higher wattage) or for 20 - 25 mins at 350° F/ 175° C in conventional oven.

Other fruits you can use: pineapple, peaches (fresh or tinned), figs, fresh apricots etc. It’s much juicier than ordinary crumbles, so it doesn’t really need the traditional British accompaniment of custard or ice-cream or other dairy/non-dairy topping of your choice, but that doesn’t mean you can’t cover it in whipped cream if you want. This is a really good pudding - quick, easy and tasty!

This next recipe is one of those ones you don’t expect to work. But it really does!

Saucy Chocolate Pudding

4 oz plain flour (use good flour - cheap flour makes for a heavy sponge)
5 level tablespoons cocoa powder
2 level teaspoons baking powder
Pinch of salt
10 oz soft light brown sugar (or castor sugar, or any other sugar you have on hand)
6 fl oz milk (soya, oat or dairy!)
2 tablespoons vegetable oil
1 teaspoon vanilla essence
2 oz chopped walnuts (optional)

Sift the flour, 2 tsp cocoa, baking powder and salt into a bowl. Stir in 4 oz of the sugar. Add milk, oil and vanilla essence and beat to smooth batter. Stir in nuts if required. Pour into an 8 inch high sided microwave dish.
Mix the remaining sugar and cocoa and sprinkle over the batter. Pour 12 fl oz (1 ½ cups) boiling water on top.
Microwave on full power for 12 - 14 minutes. [Check regularly as it can bubble over and may need less than 12 minutes. It will be sponge on top and sauce below when cooked - it’s just so clever!]
