One True Pairing Ship: I like Ron/Hermione. What can I say? I like them together, and I saw it coming from pretty far back (at least book 3). Doesn't everyone like being right? ;)
Canon Ship: See above.
"If this happens I'll stab my eyes out with a spork" Ship: I wouldn't go quite as far as that, but I was really hoping that Harry/Hermione would not be canon. It just seemed too obvious -- main guy gets most significant female character as his girlfriend -- and I always felt their dynamic was more brother/sister anyway.
"You are one sick bastard" Ship: Hmm, I'm not sure I really have a 'ship that fits this definition. The only ones I can think of are the teacher/student combinations and I don't really like any of them.
"I dabble a little" Ship: Remus/Sirius. Of all the popular slash pairings in HP, this is the one I like the best and see the most potential for interesting stories in. I've always thought that, if I were to write HP fic, it'd be the Mauraders I'd be interested in, and this is the 'ship in that group I find the most interesting.
"It's like a car crash" Ship: Snape/pretty much anyone. He's so difficult and socially inept, watching him try to interact with almost anyone has that sort of car-crash dynamic.
"Tickles my fancy but not sold just yet" Ship: Luna/Harry. I really don't know about the dynamic in some ways; in others it could be totally adorable.
"Makes no canon sense but why the Hell not" Ship: Ginny/Neville. It doesn't work because of timing, by the time it might have happened Ginny is already with Harry, but isn't the idea of them having a thing while leading the resistance appealing?
"Everyone else loves it but I just don't feel it" Ship: Harry/Draco. I don't tend to be into the rival 'shipping in any case, and Harry's dynamic with Draco doesn't strike me as being particularly well suited for it anyway. They don't have enough underlying respect for each other.
"When all is said and done" Ship: OBHWF. Because in the end, that's what makes Harry happy, and being happy is what I always wanted for him.
