Were I in your shoes, I would take whatever action was possible--legal or otherwise--to ensure that this guy does not photograph other people's special events. If you have a written copy of the contract for the photography, you can certainly file a breach-of-contract suit, though you're unlikely to win any damages since he already refunded your money. Otherwise, remember that word of mouth is a powerful tool--pan him to everyone you know and encourage them to do the same.
Most of all, though, I would IMMEDIATELY call this photographer and tell him to get his hard disk to a computer repair shop. Data is not lost unless it is overwritten, and a skilled computer technician could recover the files unless all of the data on the disk has been corrupted or the guy has already reformatted it. If the photographer refuses to take a shot at recovering the data, take him to court with the above complaints.
I think you and Matt have every right to feel hurt and angry, and my heart goes out to both of you. Have you considered salvaging some of your memories of the day by revisiting the Salem Cross Inn on your first wedding anniversary and doing a photoshoot there with just the two of you and a photographer you trust? Regardless of what happens with the photos from your actual wedding, a private shoot on location would be a cool way to celebrate your anniversary and rebuild your photo album.
