Well!

The school season is practically over - just one more assignment to go (and an easy one at that!), and then I'm home free. To be honest, I've already sort of started celebrating by starting my next home brew batch, which was:

1 Coopers Canadian kit
1 kg Light dry malt extract
250g Crystal malt
500g clover honey
250g Maple syrup
25g Cascade hops
25g Saaz hops
Safale US-56 yeast

Add the crystal malt to a grain sock and add it to 8 litres of water. Bring to a boil. Just before boiling is reached, pull out the grains and strain.

Add the kit, malt and honey and boil for 1 hour. Watch for boil overs.

With 20 mins left in the boil, add the Cascade hops.

With 1 minute left, add the Saaz hops and the maple syrup.

Strain into fermenter, top up to 23 litres and pitch yeast.

(yeast was pitched at 23 degrees, fermenter accidently filled up to 24 litre mark. Wort has a slightly burnt taste. SG 1054 or 1057 adjusted for temperature)

So far it seems to be going alright. The airlock was bubbling away nicely on the first day, but seems to have stopped since then. I put a fair more effort into this brew (not to mention it's the first one I've done by myself), so I'm hoping things all turn out.

Home brew aside though, the rest of life is going pretty sweet too. Things with MJ are still fantastic, although I'm missing the hugs a bit during this exam period. It's funny how even though you know something is there for you, once you don't have it as much anymore you miss it heaps, even though you know it's completely irrational to do so. Craziness! I'd really love the rest of the family to get to meet MJ and get to know him. He's been pretty quiet around Kaye and James which isn't his usual style, but I reckon he'd have fun with our whole gaming attitude. He tries to hide it, but he's as competitive as me sometimes.

*sigh*

Oh well. Only 4 days to go until:

1) MJ finishes exams
2) I finish assessment work
3) My home brew is ready for bottling!
