We've done similar things (or I should say, my sister has; she's the cook, not me!) It's the beef broth, as well as the cooking method, that makes the difference. Cooks Illustrated is a fascinating read, because they explain all these chemical reactions that go on in cooking.

Now I want pot roast. :)
