No-Meat Gravy over homemade red mashed potatoes
Tonight I was going to make meatballs and saute some red potatoes, but due to our lack of pans, that idea didn't work out. So instead I made the meatballs and gravy, but kind of just chopped the meatballs up into the gravy. I put some olive oil in a pan and cubed some red potatoes with the skins on. I sauteed them in oil and garlic and italian seasoning and some grill seasoning until they were golden brown. then i mashed them by hand with a potato masher! added some fresh garlic and milk (no butter because of the oil i cooked them in) and poured the gravy over the potatoes!
I didn't have any veggie broth, so i used hot water and seasonings in the gravy instead and it tastes fine.
