May is Barbecue Month (according to the beloved Hearth, Patio & Barbecue Association), and we just so happen to be on the cusp of retail grill manufacturers selling grills to consumers with high-temperature infrared burners. Most reasonably-priced gas burners cook at around 450°F and 600°F. If you have a degree in engineering, you might be able to stack charcoal and optimize airflow to cook at 700°F after 20~30 minutes. The infrared burners, on the other hand, consistantly and evenly heat up (in only a few minutes) to temperatures between 450°F, and a whopping 900°F... perfect for searing meats, just like the steak artisans at gourmet steak houses. What a great time it is to be alive!
