Vegan Tater Tot Casserole!

 So, Thomas challenges me with my veganization abilities every now and again.  Today it was tater tot casserole.  It looks complex, but the basics are just tofu, tvp, and tater tots.  All ammounts are guestimates.

Layer 1 (in bottom of baking dish)- "Ground Beef"

1c TVP
2T Olive Oil
1T Red Wine Vinegar
1T Balsamic Vinegar
1T Bragg's Liquid Aminos (or a little less soy sauce)
Dash of Liquid Smoke
1T Minced Garlic
1 Chopped onion

Cook until onions are done.  Maybe add a little water.  This was slightly crunchy.  Add water to make it less so.

Layer 2: "Cream of Mushroom Soup"

1 Box Tofu
1 Can Mushrooms (the little ones?)
2t Garlic Powder
1T Italian Seasoning
2t Salt
1T Liquid Aminos
2T Sweetener..... I do use honey... and that's what I used here.  You can use sugar or agave or maple syrup... Whatever
1/2 Cup soy milk (enough to make it a cream soup consistency

I have no idea if this would be good for soup... but it's good for THIS.

Pour it over Layer 1 and distribute evenly.

Layer 3: Tater Tots
From bag.  From Store.

"Cheese"
Real, fake, whatever.  It's good without it.  This goes on after you bake it.

Bake at 425 for 50 (? keep checking) minutes.  Add cheese if you want and bake for 3 more.  Delicious!
