They do tend to grow in more ways than one when they evolve.

[ She can't say she's too fond of seeing the newly evolved spitfire turn fire toward his teammate in a manner that may not have been intended playfully, though, and when he turned it toward Xion? Yeah, she's a little concerned as that behavior strikes her as a little on the dangerous and unruly side. ]

Maybe. I can't think of any severe cases that resulted from evolving too fast off the top of my head, but they do tend to change at least a little bit personality-wise when they evolve. That much I know for sure.
