I love this moment, mostly because Starbuck looks so happy! Like, genuinely thrilled that they beat the Cylons! Plus, it's so cute that she's *SQUEE*-ing and just *GLOMPS* Roslin with a big hug...then slowly gets embarassed that she *GLOMP*-ed the President of the Colonies. So Roslin evens things out by giving her a real hug, and you can just see Starbuck take it all in.
Coming in second would probably be the scene with Roslin practicing her speech when Adama walks in on her and she has to explain her whole strategy of memorizing a talking point and ripping the card in half and throwing it on the floor. Another moment that is just so real. Their smiles are so pure, you really don't feel like they are acting in that scene - they are Adama and Roslin.
