What to do when you are going to be home and working outside all day long? Smoke some spare ribs! Here is my fairly easy method I used. Follow along! From start to finish, this took about 5 hours.
Soak your wood chips, (store bought) for at least a half hour.
I made my own spice rub, (only had to run to the store once to get something I did not have)
2 Tbs. kosher salt
2 Tbs. black pepper
2 tsp. cayenne pepper
3 Tbs. brown sugar
1 Tbs. ground cumin
2 tsp. ground allspice
2 Tbs. chili powder
3 Tbs. paprika
2 tsp. garlic powder
1 tsp. dry mustard
the hardest part is pealing off the membrane on the back of the ribs, if you don't the smoke and spice will not penetrate the ribs as well. Wash and pat dry, then put on spice rub and press it on with your hands.
The term BBQ "means low and slow", (Grilling is hot and fast) So set up your grill like this, ribs on one side, no fire under them, a pan of water and your smoker box on the other side, replenish water and chips at same time, bout every 30 to 45 minutes.
With the two burners on low, I was able to keep a constant cooking temp of 200 to 225 degrees.
Now to make the home made bbq sauce... two things not in this photo I added afterwards are liquid smoke and Habanero pepper sauce.
cook onions and garlic in 1 Tbs of butter and 1 tbs of oil
When browned add tomato puree and
2 cups brown sugar (next time not so much brown sugar a little to sweet for my taste)
1/2-cup Worcestershire sauce
1 oz. white wine vinegar
1 Tbs. chili powder
1 Tbs. paprika
Simmer for about 45 minutes or until it thickens. Here is where I tasted it and then added liquid smoke and Habanero pepper sauce for more flavor.
ALWAYS have a full back up tank when smoking!!! I had got the second to the last on at the closest store on Saturday morning.
after 4 to 4 1/2 hours of smoking, coat the ribs and turn on the fire under them for the last 20 minutes, watch so they do not burn...
Wrap them tightly in tin foil.
put them in a paper bag for about 20 minutes to a half an hour, this way they absorb juices back into the meat, and you have time to boil the corn and make a salad and have another cold adult beverage!
