Tonight I made twice baked potatoes, mixed with the sauce I used to make for stroganoff. It was so delicious I thought I'd share what I did. But I have an issue with measurements, so keep that in mind.

Preheat the oven to 450. Take two not-small potatoes and poke holes in them with a fork, then bake for about an hour. When you take them out you may need to let them cool just a little bit for easier handling. Cut them in half longways and scoop out the flesh taking care not to damage the skins. Place the skins on a baking sheet, I usually line it with a sheet of foil for easier cleanup.

In a bowl, mash up the potatoes then add one can of cream of mushroom soup, a dash of pepper, a splash of Worcestershire sauce, a packet of dry onion soup mix, and a dollop of sour cream. Mix well and spoon the mixture into the potato skins. They may overflow a bit considering all the extra ingredients. This is only a good thing. Bake for another 40 minutes.

Then enjoy.

I had some shredded cheddar cheese. It was okay with a little added on top but they were really good without anything more. I still have two halves for lunch tomorrow. They aren't as good reheated but I needed to use two potatoes to account for the whole can of cream of mushroom soup. But that was the limit to my "measurements".
