Pollo en Mole Rojo, it translates to chicken in red sauce. Something my aunt taught me while I was in San Antonio.

[ Still disassembling the first chicken. Her knife skills are solid, here. ]

Even as Anglo as this town is, I was able to find most of the spices and such for a passable version of the mole.

Wine, for the most part, with some citrus fruit added to take the edge off the taste of leaf-and-stem some of the local wines tend to have.

[ She pours a half-glass from the pitcher in the icebox for him to taste. There is another pitcher of the stuff in the icebox behind the first. ]

Have a taste. I managed to get an average cabernet, so I think it turned out pretty well.
