Ok, not really Shepherd's Pie. I guess it's a take on Cottage Pie but I'm not about to change what I tell the kids, that'd freak them out!
Shepherd's Pie
1 T oil
1 onion, diced
2 carrots, diced
2 ribs celery, diced
2 garlic cloves, diced small
salt and pepper
poultry seasoning
2 T flour
2 cups broth
about 1 pound of browned ground beef
1 1/2 cups frozen peas
1 1/2 cups frozen corn
8 small potatoes or 6 medium
salt
1 T butter
1/2 cup milk (or cream or broth - whatever you like in your mashed potatoes)
Heat oil in dutch oven, sautee veggies until softened. Sprinkle in flour and cook it for 2 minutes or so. Add in broth and heat until slightly thickened. Season with salt, pepper, and poultry seasoning. Add in ground beef then peas and corn and cook until heated through.
Meanwhile make a pot of mashed potatoes how ever your family likes them. Pull the veggie and meat mixture off the heat and top with mashed potatoes all the way to the edges. Heat in 375 degree oven for about 20 minutes to set the potatoes. If you like you could sprinkle a little bit of cheese on top of potatoes before baking.
