Carrot Cake:
Preheat oven to 350 degrees
Ingredients:
1.5 cups oil
2 cups sugar
2 tsp cinnamon*
2 tsp vanilla*
1 tsp salt*
* Combine well
Add: 4 eggs -> @ a time (she swears this is the secret)
2.25 cups flour
2 tsp baking soda
1 oz can crushed pineapple
2 cups shredded carrots
1-cup nuts
Combine and bake for 50-60 minutes.
Icing:
1/2-cup butter, softened
4 oz cream cheese softened
1 tsp vanilla
1.5 cups confectioners’ sugar
