Makes four 3/4 cup servings; about 2 carbs per serving
3 cups heavy whipping cream
1/4 cup Splenda
1/2 tsp vanilla extract
1 tsp almond extract
1 envelope unflavored gelatin
2 T cold water
1) Bring cream to the point of a rolling boil in a large saucepan (watch for boilover.)
2) Remove from heat.
3) Quickly mix gelatin with cold water, introduce into cream.
4) Add vanilla and Splenda to cream mixture.
5) Divide to dishes, cool to room temperature.
6) Chill until firm.
