[serves 2 as good size main portions or 4 as a starter - good for freezing]
2 good size red onions (finely chopped)
2 cloves garlic (finely chopped)
2-3 medium size chillies (chopped) [chillies vary a lot in heat and size, only you know how hot you like stuff. I use large thumb sized mixed chillies for this, which are a medium strength chilli, and 3 is reasonably hot. if using scotch bonnet for example, i advise maybe a half of one if they're small]
one medium lettuce / big bag mixed leaves (loosely chopped)
3 tea spoons sugar (or 4 of honey)
1 teaspoon crushed peppercorns
2 large handfuls white fish (cut into 1 inch chunks)
1 handful prawns
2 handfuls cherry tomatoes (whole)
bunch/handful fresh corriander (ripped or roughly chopped)
3 teaspoons english mustard
3/4 bottle cheap white wine
1/4 pint single cream
You want a big pan or stock pot for this
add the garlic and chillies to some hot olive oil
then add the onion and sweat down
add the sugar and peppercorns
next add the lettuce or mixed leaves
when this has reduced down in size (the leaves will shrink dramatically when fried) add the fish and prawns
mix and stir giving the fish a chance to seal a little in the hot oil
add the cherry tomatoes ( in skins but without stalks) and 3/4 of a bottle of white wine
now is a good time to add the mustard as it will disolve quickly in the wine
bring to the boil and cook for 15 minutes stiring very now and then
turn off the heat and stir in the cream
garnish with a few leaves of corriander and serve with crusty bread and a good bottle of white wine

Salmon is Lovely! Very nice with Ginger, soysaurce, chillies and honey.
Seafood is expensive... but you may be able to find a local fish market or find fish thats in season = cheaper :D
