I don't think I posted my new year's resolutions. Hmmm...
I'm too lazy to go check, but here they are:
1. Eventually drink 8 glasses of water a day. I'm slowly doing this. I'm promising to drink one glass of water a day in January, two in February, etc. It's odd that I don't get in all my water, as I generally don't drink anything BUT water. It's pretty rare of me to drink soda or juice. Occasionally, I'll have milk at dinner.
2. Try one new recipe a week. I'm not limiting this to dinners. Desserts, breakfast, soups, whatever. I'm trying to remember the new one's we've tried thus far...
Week 1 - Battered pork chops. Made with bisquick…like their chicken fingers, but you fry them in a skillet with a little oil instead. Difficult to flip, but tastes really good!
Week 2 - Cheeseburger pie. I had 2 bites and refused to eat anymore. Good in theory, not in practice. Ingredients were: beef (we used ground turkey), shredded cheese, bisquick, milk, eggs
Edit: Week 3 - Banana bread....NOMNOM!
Week 4 - Drunken Tuscan Pasta. This recipe has been passed down from generations to generations. Grandparents, aunts, uncles, cousins...all the way down to Rachael Ray and then down to me. LOL. However, this is NOT a 30-minute meal. It's spaghetti boiled in red wine (NOT water!) then mixed with spinach, mushrooms, garlic, EVOO, parmesan cheese, and pancetta (salty Italian bacon). The aroma in the house while cooking was amazing! It tasted really good. The recipe said it made 4 servings. Matthew and I each had one bowl and we had enough left over to fill 2 large gladware containers. I'd say it made enough for 8 or 10 servings, easily.
