Haha, in all sincerity, let's start from the beginning.
At first she didn't think too much of him either way. He seemed like a good, normal, guy and he was part of her crew which was why she was always there to encourage him about his work.
When they finally 'met' in Colvus she was really grateful to him for cheering her up, even if he had done so unintentionally. Beat was her first break in a long time from holding a completely practical relationship with most of her crew, even though by that time she would have been there for about eight months (or so). So with the possible exception of Isako (and Greed in some sense), Beat was one of the first people on the crew for her to get really attached to. From their first meeting she saw him as someone she could be more relaxed with, joke around, and let her guard down. A lot of times Winry feels she has to force herself to some level of maturity and act in a certain manner to continue to hold the respect she needs as the First Mate. It can get a little stressing at times, particularly when it goes against her actual nature, but with Beat she doesn't feel that.
He continued to grow on her over time as the two just continued to joke around with one another and talk. He's someone she can talk serious subjects with, and goof around so it's gotten to a point where she doesn't even see him as a boy, or younger than her, or a powder monkey, or really any sorta category you could put him in. He's more of a kindred spirit to her since they share so many of the same ideals, and she is touched by his deep and honest value for family; something she likewise considers very important.
I'm not sure how much more strongly she'd feel for him after the whole survivor thing. A hell of a lot I would imagine, so she's probably gonna start being a little protective and extra naggy at him like she is with Edward and Alphonse. After going through all that crap she's gonna be more attached to both him and Ling xD so watch out!
Which of course means the teasing might shoot up as well, too :>
