haaaaloooooo there!
quick update-

Es got a new report card, he is now "Advanced" in reading comprehension and analysis.  Woot!
He got tons of new toys for his birthday, he also got to go to Chuck E cheese, and boomers, and Benihannas.  I am so blessed to have him in my life.  he is so helpful around the house, and never yells or demands his way or acts spoiled, he does what I ask him and hardly ever even watches TV.  He is such a blessing.

I have removed red meat from my diet.  yep.  That means no fillet Mignon for me!!  Its just that I've learned how horrible it is for your body, and studies show that a person with a red meat diet is 30-50% more likely to get heart disease or cancer than a person who doesn't.    Red meat is also highly linked to colon cancer (which my grandma died of).  Overall I just feel better when I dont eat it.  My energy levels are up and so is my mood.  I still get protein though.  I eat 3 eggs, have wheat toast and a v8 every single morning.  as for lunches and dinners I've been trying to keep it to vegetables, rice and chicken.. and really it has nothing to do with my weight.  I would actually like to gain at least 5 pounds.  Its just because of an overwhelming motivation to treat my body right.  Es is totally on board with it too.  It's so adorable, I think he has got to be the only kid in elementary school who asks his mom to put grilled asparagus in his lunch every day!  carrots too!  lol, he's all into the healthy foods like me.  he tells me all we have to do now is go running more.  He's right.  My running schedule has really suffered because of my classes.  This summer will be better though since I'll only be going to class twice a week.

Saw Date Movie (steve carell) with Will last weekend.  It was pretty funny.  Oh how I love me some Steve Carrel!  After the movie we took Es to dinner at Benihanna.  Will wanted to take him out for his birthday.  I made a red meat exception for Bennihana.  How could I not?  But now that it's passed it's been back to no meat.  I'm going to try a quinoa-tofu recipe tonight.  Hope it comes out good.  I made a Mushroom-Chicken picatta last Friday for the first time.  It  was delicious!!  How could I have gone 27 years without ever trying Chicken Picatta?

I can't believe it's the middle of fucking April. holy shit I feel like the year just started and already it's almost half way done!  My classes are really demanding, and I'm insanely busy the majority of the time, but I am enjoying life.  really, life is good!
