Rice whole grained pancakes (gluten free and sugar free)

I can't say, that I am such a great cook, but I am really interested in healthy eating and especially in healthy desserts and in dietology in general. So here you are my gluten free healthy whole grained rice pancakes.


Personally I don't have any kind of intolerance to gluten or cow milk and really I don't think, that cow milk is unhealthy or that whole grained wheat is unhealthy. But I always was interested in all kind of recipes whatever they are vegetarian, vegan, or for people with allergies. Will be really glad if my recipe helps someone :).


Ingridients:
1. Somewhe 450g of whole grained (it's very important, that's why i call them healthy) rice flour.
2. Somewhere 750ml (3cups) of rice milk (sugar free of course). I think it's ok to use any other milk, but i just wanted to try rice milk, btw it tastes really good.
3. 1tbsp(even a bit less) of baking soda
4. 2 tbsp of not refined coconut oil
5. It meant to be vegeterian, but i am sorry i couldn't manage it without 2 eggs, but if you are vegan or vegeterian try to do it without eggs and please let me know how you did it. :)

How to cook:
Put all your flour in a big bowl and then put there all other ingridients and mix them with a blender. Dough supposed to be liquid. On a hot pan put some of not refined coconut oil and then pour some dough and fry your pan cake. Stir all your dough every time before pouring it on a pan for best results.

It tastes really good with raspberries and honey.
