You see people like Robert Downey Jr, Angela Bassett, Oscar Issac etc…etc do the big franchise films and still good work but that’s because they already have career/hits/acclaim.
Whereas newcomers start with these movies and are mostly known for this which results in typecasting or fewer offers. It’s not every actor who’ll have a Harrison Ford career boost after a Star Wars-like movie.

Harrison Ford had already done Indiana Jones so he was known for that, but Mark Hamill has said he wasn't getting that many offers after Star Wars.

First Star Wars came out in 1977 and first Indiana comes in 1981.

Also, if Tom Selleck had not been in a contract (I forget the details) for Magnum P.I. around the time of the show's pilot, it would've been him in Raiders & who know how that would've turned out for the movies and Ford's future.
