Milk Bar was cool in NYC as part of the David Chang empire in like, 2012. Became ubiquitous and thus uncool. They do a lot of really sweet flavors like, tooth achingly sweet.

Milk Bar's packaged stuff is uniformly trash but I like that they use artificial vanilla for their nostalgic flavors. A complex Ugandan vanilla is lovely but why use it for a confetti or yellow cake.

But also they haven't felt innovative in over a decade soooo

I was genuinely surprised about the quality level of the packaged food.

Or should I say “lack of quality” - Milk Bar shop’s cakes are quality-enough for a cake meant to taste like homemade boxed “birthday cake” flavor from childhood 🍰 Simple, attractive, bright colors… but I have no idea how Tosi arrived at saying yes to mass producing this mess. Fatigue with the process? I tried basically everything and the throughline was a texture of sawdust, with a sweet-n-low flavor, and a lot of hydrogenated oils to add back suppleness. Just weird.

I still do not know what the fuck a milk bar cake is. I have also never had avocados on toast or otherwise, so I guess I'm just not a true Millennial.

I’d add Portland and Austin to that list, but yeah. We’re seen as hipsters, and frankly, a lot of us act like them.

Case in point: That Jezebel piece screams “we liked milk bar before it was cool” while whispering “but please accept us, we don’t want to be old and uncool” to the younger gens. It’s really sad… like, I remember when Cool Moms were jokes, but now it seems like they’re the status quo.

I’m gonna be different and say that I do like Milk Bar cakes and generally have them for my partners birthday. They are very sweet though!
