I eat both.
I love eating the peel of an orange after eating the orange. I generally eat my fruits and vegs with the peel, unless is something like a kiwi or an avocado.
And I save banana peels in the freezer to make vegan pulled pork.

Orange zest makes so many dishes more delicious, especially desserts, and I use bananas peels for fertilizer.

Yes! I put orange and lemon peels in my tea.
I also dehydrate them and grind them to have them ready for recipes.

I take the peal of a banana and cut the ends, then scrape the white part on the inside with a spoon, because it can taste a bit bitter if you leave it on. Then with a fork shred the peel to make it look like pulled meat. Wash them well and strain them.
You can use it right away or freeze it to use later.
Then you can season it depending on your taste. In a bowl I usually mix soy sauce, garlic and onion powder, paprika, liquid smoke, mustard, oil. Or sometimes bbq sauce, miso, etc. Add the peels, let them marinate for half an hour and then add them to a hot pan. They are ready when they're soft and not crunchy, though that depends on individual taste. Usually in about 10 minutes.

Yes, don't use overripe bananas.
Either ripe or slightly underripe.
