I'm going to try cutting out delivery/takeout this year. it's like my one vice but it's so expensive and also unhealthy. trying to cook more at home and maybe even meal prep a bit. ontd if you have any good/easy recipes for a novice, send them my way!

I love this as a no-effort meal. A few of my friends asked for the recipe and told me a ton of their other friends wanted it too. It makes lunches for the week, and I saute a bag of fajita veggies before baking so it has more vegetables.

Chicken spinach pesto is good and easy. Roughly chop spinach and mix a spoon of the pesto to the spinach to coat. Put a layer of spinach on an oven safe baking dish, put a boneless skinless chicken breast on the spinach and cover the chicken with the rest of the spinach-pesto mix. Then throw in the oven until the chicken is cooked. I found that if I cut the chicken breast to make thinner, they cook quicker and the spinach doesn’t get over cooked.
