May 5th September 16th of 1810 marked the start of Mexico's War of Independence, initiated when Father Miguel Hidalgo I. Costilla tolled his church's bells in Dolores, Guanajuato, late at night on September 15th/early morning of September 16th, asking people to uprise against the Spanish Crown, an event known as El Grito de Dolores (the Cry of Dolores), it is now celebrated across the country by ringing a bell, shouting the names of important heroes and "¡Viva México!" and eating delicious food all day long.
