My mom oven roasted some asparagus the other night. She offered me some but I kept saying nah, I’m good. Then I remembered the brussels sprouts I was offered years ago that I kept denying that were baked with olive oil, salt & pepper, etc that I ended up loving.

So I gave them a try and I’m officially converted. Asparagus. 👍

I like to roast my asparagus after coating it with bread crumbs and Parmesan, so delicious. The powdered Parmesan in the plastic container works best!

those are great but the best veggies are good raw or cooked and both asparagus and zucchini need cooking. asparagus is also great as a pickle tho!

Zucchini "noodles" with pesto or tomato sauce are pretty nice too.

I've only had it once but asparagus was so good. Though, I don't think I'll buy any since I don't know to cook them.

Super easy! Break the bottom, woody part off, toss with some olive oil, sprinkle with salt and roast on a sheet pan in the oven. As a general rule, most veggies taste way better roasted.

I haven’t had a stand out asparagus, but I don’t doubt if I had it cooked by someone that knew what they were doing I’d love it.

Also who doesn’t love zucchini it’s such a mild veg that you can do anything with!

Pasta with pan-roasted green asparagus with ramsons pesto (bought from a store or farmers market is fine bc laziness) and goat's cheese. Asparagus and ramsons are just coming into season here, and I am so looking forward to this.

i dont get zucchini. no flavor and no texture and it doesnt even absorb spices well
