MTE on the eggplant, people look at me like I'm crazy when I avoid things on a menu due to eggplant but ugh it's so revolting and squidgy when roasted, and the taste is gross tbh

Slice them up, dip them in olive oil and then bread crumbs and parmesan. Bake them for like 10 minutes and they are DELICIOUS

Thank you. My sister puts zucchini in everything and ugh it's such a gross food. I hate the texture of it no matter how it's cooked.
