i will tell you something i love when i dont really feel like cooking anything.

EXCEPT i completely change it up and i just use purple potatoes w/ all kinds of vegetables (yellow squash, zucchini, green beans and snap peas).

i dont boil the potatoes, and i use pistachio oil (trader joes has a 3 pack of pistacho, walnut and some other oil that are perfect to use on EVERYTHING for $12 or so). then my spices are random; paprika, onion powder, lots of garlic, pepper, himalayan salt and whatever mixed spice i have in my cupboard/feel like tasting. after its cooked, then i smash the potatoes cause that part is fun.
