I feel like I need to write down some of the really good recipes I try so I don't lose them. You don't need to read this, unless you're really interested in trying an everything-free recipe.
Delicious biscuits! gluten free, sugar free, soy free, nut free, corn free, potato free, yeast free... can also probably be made vegan (but may no longer be soy/corn free depending on what kind of shortening you use)
1 cup sorghum flour
1/2 cup tapioca flour
1/2 cup gf oat flour
1/4 cup millet flour
1/4 cup arrowroot
1 teaspoon xanthum gum
1&1/2 teaspoon salt
1/2 cup butter
1 can coconut milk
425 degrees 20-30 min
i added one egg and used less butter but it doesn't seem like it's necessary. also, most of these flours i just made myself in a clean coffee grinder [oat, millet, tapioca]
These turned out crunchy on the outside and squishy in the middle. even davidson and amber wanted to eat more than one and neither of them are gf. It's the first awesome comfort food I've had since being on this diet.
