Did a food experiment.
- Canned crab meat + monterey jack with jalapeno cheese + clove of garlic, chopped and blended in the magic bullet.
- Chicken breast, fillet removed. Cut the breast into a 'pocket' and stuffed with 2 teaspoons of the crab & cheese mixture. Season with lemon pepper, fresh ground pepper and a dash of sea salt.
- Wrap chicken breast with two slices of dry cured proscuitto ham.
- Drizzle with a bit of extra virgin olive oil.
Browned the wrapped chicken in a grill pan for 4 minutes on each side, then removed to the oven to bake at 325F for another 15 minutes.
Let stand for a few minutes, then serve on a bed of egg noodles with a vodka sauce.
Turned out to be just amazing, really. A blend of so many different flavors that all seemed to come together perfectly. And quite filling, actually. One breast seems enough to fill me up, probably because the crab seems so rich.
