A leavening agent. It's used when making soap, as well...[not that it is the soap, that would be nasty. She ponders some more...]

I suppose you could use alcohol of some sort.

A wonderful suggestion! Now I have to figure out whether or not this kitchen has any yeast and how to incorporate it into this recipe... or find an entirely different recipe. [A beat] Do you have any experience with using baker's yeast?

No, that's good. The yeast needs one of those to be able to rise. I believe it consumes the sugar.
