We've had very little snow lately, but that hasn't stopped me from fostering an interest in snowboarding. I bought my first board and boots on Saturday and am very much looking forward to using them. It seems exceedingly less hazardous than my last sport. No matter what happens or how many times I fall on my butt or faceplant or panic I can still breathe, which is always to my benefit.
Bringing some sort of seitan dish to Christmas Eve festivities is slowly becoming a tradition of sorts. I wanted something which wasn't sausage and didn't require fancy or fussy plating (e.g. seitan piccata for the former and beanball subs for the latter). Here's a winner for this year:
Seitan Scaloppine with Lemon-Olive Sauce (It looks elegant and easy.) Not sure where to come by Meyer lemons here.
This probably won't compare to the Chicago Diner's Radical Reuben, but this
sandwich looks tasty. Vegan Dad does fantastic things with
seitan, so it'll be worth checking out at some other time.
